 pommes à la crème fraîche vol-au-vent with white sturgeon caviar
 delicate puff pastry filled with potato purée and crème fraîche, crowned with luxurious white sturgeon caviar — a refined nod to classic french elegance.
italy — antipasto
 american wagyu carpaccio with winter mushroom salad and shaved pecorino
 slices of wagyu beef dressed in truffle oil, complemented by earthy mushrooms and aged pecorino romano — rustic italian comfort with modern finesse.
japan — 煮付け (nitsuke)
 citrus-miso glazed salmon with buckwheat soba noodles and kabocha squash in green tea–shiso broth
 a delicate balance of sweet, citrus, and umami — inspired by the japanese art of poaching and glazing fish with seasonal harmony.
morocco/israel — طاجين (tajine)
 braised lamb shank with israeli couscous, chermoula, preserved lemon, and toasted almonds
 slow-braised and aromatic — an ode to north africa’s vibrant spice markets and age-old tradition of communal dining.

 guanajuato tres leches cake with oaxaca mocha sauce
 a sweet finale inspired by mexico’s heartland — rich tres leches soaked sponge paired with silky mocha sauce from oaxaca.
