LE RÊVE RESTAURANT & RAW BAR APPOINTS JEFF ARMSTRONG AS NEW EXECUTIVE CHEF

Le Rêve Restaurant & Raw Bar is pleased to announce the appointment of Jeff Armstrong as executive chef.

Since opening in 2024, Le Rêve has quickly become one of the region's premier dining destinations, bringing refined cuisine and elevated hospitality to Sheridan's Historic Cady Building.

"I'm thrilled to join Le Rêve while continuing my role as executive chef at The Warehouse Gastropub," says Armstrong. "It's an exciting opportunity to help shape the culinary experiences at two of Sheridan's most distinctive restaurants. I look forward to building upon the incredible foundation at Le Rêve while introducing fresh seasonal dishes and creating memorable dining experiences for our guests."

Chef Armstrong brings more than two decades of culinary experience from acclaimed restaurants and luxury resorts across the country, including Four Seasons Resort & Residences Jackson Hole, Westbank Grille and Chef Michael Mina's Handle Bar. Known for his refined yet approachable style, Armstrong emphasizes seasonal ingredients, thoughtful technique and beautifully executed dishes that encourage guests to slow down and savor the experience.

The appointment comes on the heels of Le Rêve's newly unveiled full kitchen, marking an exciting new chapter for the restaurant. New signature dishes include Oxtail Bolognese with house-made mafaldine, shaved pecorino, bottarga, and root-to-shoot micro kale; Deconstructed Beef Wellington featuring grilled American Wagyu tenderloin, mushroom-leek pithivier, creamed spinach, sauce Bordelaise and celery root potato purée; and Sake-Broiled Chilean Sea Bass served with shrimp dumplings, julienned carrots, leeks, maitake mushrooms and Bloomsdale spinach in a fragrant shiso broth.

Chef Armstrong's first night of service will be Wednesday, August 12, following founding Executive Chef Zoilan Ruiz's final service on Sunday, August 8. Guests are invited to celebrate Chef Ruiz's tenure during his Farewell Tasting Dinner on Tuesday, August 4, beginning at 5:30 p.m.
